Ingredients

Dressing
2 tbsp red wine vinegar
1 tbsp mayonnaise
1 garlic clove minced
2 anchovies
1 tsp Worcestershire sauce
1 lemon for juice
1 tsp black pepper
1⁄2 cup olive oil
Salad
4 hearts of romaine lettuce
2 English muffins, split
2 boneless, skinless chicken breasts (6–8 oz each)
Olive oil
Salt and black pepper to taste
¼ cup black or green olives pitted and chopped
¼ cup sun-dried tomatoes chopped
¼ cup finely grated Parmesan cheese
Preparation:
- Before you start, preheat the grill.
- Add all the dressing ingredients to a food Pick processor except for olive oil and blend them properly. Slowly drizzle the oil into the processor.
- Cut the romaine lettuce down from the middle lengthwise. Leave the root end intact so that it holds leaves together.
- Apply olive oil to the romaine, English muffins, and chicken and further season it with salt and pepper.
- While the grill is hot, place the oiled chicken and cook it for 4 to 5 minutes from both sides until it looks firm and caramelized. Remove the chicken from the grill and keep it aside to rest.
- Now it’s time to grill the lettuce for 1 to 2 minutes to make it lightly char and wilt the leaves. Don’t forget the English muffins. Grill them until they turn brown and crispy.
- Take the chicken and slice it into thin strips.
- Chop the muffins into bite-size pieces.
- Now that everything is cooked, bring the dressing, chicken and muffins together to be served.
- Take a plate and place everything.
- Add olives and sun-dried tomatoes over individual lettuce halves. Drizzle with dressing and sprinkle with cheese.
