Easy Clam Chowder Soup

• Take 180gm of minced clams and drain their juice into a large pan. Mix it well with 1 cup minced onion, 1 cup diced celery, 2 cups cubed potatoes and 1 cup diced carrots. Add water and cook over medium heat until soft.
• Use another pan to melt ¾ cup butter over medium heat. Put ¾ cup all-purpose flour and whisk continuously. Add 1-quart half-and-half cream and stir constantly until it becomes thick and smooth.
• Keep stirring the vegetables and clam juice. Do not boil.
• Stir in clams before serving. When heated, add 2 tbsp red wine vinegar, and season it with 1 ½ tsp salt and ground black pepper to taste.
• Serve it immediately with your favourite white wine.
